TAURASI DOCG
This wine is produced with grapes from the ancient Aglianico vine
cultivated in particular soils of Irpinia, it undergoes aging
four years of which at least one and a half years in cask
oak. It has a ruby red colour, characteristic odor and flavour
full, very persistent, with hints of cloves and tobacco
and morello cherry jam. It pairs well with game dishes
and tasty roasts. It should be served at a temperature of 16° – 18°
Production area:
Torre le Nocelle, in the heart of the Taurasi production area
DOCG, with land located at an altitude of 400/450 mm above sea level,
particularly suitable for viticulture.
Grape variety:
Aglianico chosen and selected: 100%; clones used VCR7 and
VCR23.
Farming system:
The cultivation method of the vineyards is spurred cordon,
with 3500 vines per hectare, conducted with an agricultural method
integrated. The production per hectare is 80/90 quintals.
Winemaking:
Manual collection and placement in plastic boxes max
weighing 22 kg, carried out between the end of October and the first decade of
November. Crushing-destemming, followed by maceration in tanks
of stainless steel, at a controlled temperature of 23° – 25° per
a duration of 15/20 days. Racking and slow fermentation
always in steel tanks. After the first decanting the wine comes
aged in oak barrels for at least 18 months.
Characteristics:
Intense ruby red color, intense, strong, ethereal bouquet
and spicy, dry flavor, full of great body. You drink at
temperature of 16/18° C. In large balloon after uncorking
and poured into a carafe a few hours before.
Pairings:
Meat-based dishes, roasts, game and spicy cheeses.
